In a hot sauce, you've got to balance heat with acidity, so The Real Dill uses Baere-liner Weisse beer from Baere Brewing Company, which has acidity and tartness. This specific beer really cuts through the heat, while still providing beer flavor. It’s also light in color, so it doesn't muddy up the finished product.
