This style originates in the island of Sardinia off the southern coast of Italy, where the abundant saffron was sometimes used to color pale pasta, making it appear rich with egg. Sneaky! (But, for our purposes, we're actually glad there's no egg in this pasta.)

Malloreddus pasta is often served with a creamy sauce, fresh mint, and pecorino. We think that you can make a delectable, plant-based version of this dish with a thick, vegan cream sauce, that same fresh mint, and a dusting of vegan parmesan. Bellissimo!
